Liege Waffle History
The word Waffle is borrowed from the francic language meaning “honeycomb of bee”. There are waffle recipes traced as far back as the 14th century and in different countries around Europe.
The legend goes that the waffle of Liège was invented by the creative chef for the Prince-Bishop of Liège around the XVIII century. The prince demanded a new pastry. The chef experimented with a rich-tasting brioche cooked in a gaufrier (what would be called waffle-maker) and had an idea to add vanilla and sugar pearls into the dough. The vanilla released a tantalizing perfume and the sugar pearls glazed the honeycomb pastry to create a scrumptious and decadent taste the Prince and his subjects loved!
Even today the Liege waffle has remained the favorite style of waffle and around the world and now in Newark, Delaware.
